Baked Double Chocolate Donuts (oil free/vegan/gluten free)

Writer's picture: QueerlyRootedQueerlyRooted

You guys, I LOVE chocolate & I love it even more when I know it's not filled with junk refined sugars. This recipe is not only Oil Free, Gluten Free AND completely vegan but also solely sweetened with the natural sugars in bananas & maple syrup. The banana does leave a VERY faint banana flavor so if that is not your thing, you can try substituting the banana with apple sauce or nut butter to keep it oil free.

ENJOY!!!

Dry Ingredients:

3/4 cup oat flour

3/4 cup almond flour

1/4 cup potato starch

2 tsp baking powder

1/2 tsp sea salt

1/3 cup + 1 tbsp dutch cocoa powder

3/4 cup vegan dark chocolate chips ( I use EnjoyLife brand)

Wet Ingredients:

1 smashed banana (90g)

1/2 cup maple syrup

1 tsp vanilla extract

1 tsp apple cider vinegar

1/4 cup plant milk ( I use Ripple pea milk)

Preheat oven to 350 degrees.

Combine wet & dry ingredients thoroughly in separate bowls except for the chocolate chips. Stir in chocolate chips until well distributed. Transfer mixture into a piping bag or a 1 gallon storage bag. Cut off the tip at about 3/4 inch - 1 inch & pipe into donut molds. This will help get a well rounded donut vs having a rounded bottom with a flatter top. Bake at 350 degrees for 15 minute. Eat as is or add your favorite icing or glaze!
