Chocolate Coconut "No Bake" Cookies

Most No-Bakes use a combination of white sugar, brown sugar and butter to get that perfect fudgey consistency. This more natural version uses honey & coconut oil making them a "cleaner" option in satisfying your late night sweet tooth ( which is exactly when I tend to make these). I also chose to add protein powder to this batch however that is completely optional. All protein powders may not work.. often they will leave your cookies gritty or tasting like artificial sweeteners, so don't get frustrated with a little trial and error! Having a gilt free chocolatey treat is well worth it :)




Yields: 18 cookie balls


Ingredients:

3/4 cup Natural Peanut Butter

1/2 cup Coconut Oil

1/4 cup Raw Honey

2 tablespoons Unsweetened Cocoa Powder

1 serving chocolate or unflavored Protein Powder ( optional - I used Ka'chava Superfood Powder (https://www.kachava.com) however you might want to consider using a powder with fewer carbs for a lesser calorie cookie.

1/4 teaspoon Vanilla Extract

1/4 teaspoon Coconut Extract (optional)

1.5 cups Quick Oats

1/2 cup unsweetened finely shredded Coconut

Salt (around 1/8 teaspoon or to taste - it will depend on how salty your peanut butter is)


In a medium sauce pan, melt the Peanut Butter, Coconut Oil and Honey over med-low heat. Add protein powder, if you're using it and stir until it's completely combined, with no chunks. Add Vanilla Extract, Coconut Extract & Salt. Once everything is melted & combined, remove from heat & stir in Oats & Shredded Coconut until covered.


Line a cookie sheet with wax paper. Once the mixture is cool enough to touch, roll 1 heaping tablespoon into a ball and place on wax paper. Should make about 18 balls.

Let set in fridge for about 30 mins.
