I warned you that there was going to be in influx in zucchini posts! Until I can find enough neighbors to pawn these things off to, I'm stuck with them... therefore you're stuck with them. Luckily for both of us, they are delicious :P
These Fritters use Trader Joes falafel mix making them SUPER easy and bursting with flavor. I seriously LOVE that mix for so many things. I made classic mediterranean falafel in pita sandwiches a couple of weeks ago and had about half the box left. This was the PERFECT use for that left over mix. Because zucchinis have a high water content, it's important to add additional seasoning to the mixture. I chose to mimic the Falafel flavors but you could really take this in many different directions. An option that crossed my mind was to season the fritter with basil and stuff it with vegan mozzarella cheese for an italiany pizza fritter :o
Ingredients:
1 large zucchini ( peel on & shredded)
1 cup Trader Joes Falafel Mix (dry)
1 Egg Replacer/ Binder ( I used Bobs Red Mill)
1/2 cup water
1/4 teaspoon salt
1/2 teaspoon smoked paprika
1/2 teaspoon cumin
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
Instructions:
Preheat oven to 375 degrees.
Wash and shred the zucchini into a bowl. Using a cheese cloth, dish towel or paper towel squeeze out as much excess liquid as possible. In a bowl, mix the shredded zucchini, Falafel Mix, Egg Binder, and water. Add all spices.
In a heated skillet, add a small amount of oil and heat 4-5 small patties of mixture until browned on both sides. Transfer patties to a baking pan and bake in the oven for 20 more minutes.
Serve with vegan Tzatziki sauce or a dressing of your choice.
