Fudgey Black Bean Brownie Bites

No more dense dry vegan baked goods. These brownies are mindblowingly decadent.

When fresh they are gooey and rich... a perfect base up for a Hot Fudge Sunday. Once refrigerated, the maintain that fudgey texture for days on end, so they are a great "make ahead" dessert for any occasion ( I personally they taste even better on day 2). Nutritionally, these guys are gluten and dairy free with no refined sugar.


INGREDIENTS:

1 can drained and rinsed black beans

1/4 cup quick oats

1/4 cups almond flour

1/4 cup coconut oil

1/4 cup Honey (replace with maple syrup or agave if you are a strict vegan)

1/4 cup Maple Syrup

1.5 teaspoons baking powder

1 teaspoon vanilla extract

4 tablespoons unsweetened cocoa powder ( I like to use a dutch cocoa)

1/2 teaspoon sea salt

2-3 tablespoons unsweetened almond milk (if needed)

1/2 cup vegan mini chocolate chips (Enjoy Life brand is a dairy, nut & soy free)

*Optional Nuts ( walnuts, pecans etc).


** Substitution Options!

1) Coconut Flour is a great GF option! Sub all or part of the Oats or Almond flour.


Yields - 12-16 brownies


Instructions:

Preheat oven to 350 degrees.


In a Blender, combine all ingredients except for the Almond milk and chocolate chips. Blend until smooth. Add almond milk only if the batter needs to be thinned out. It should be thick but pourable. Do not add more than 2 tablespoons of almond milk. Transfer to a bowl and stir in mini chocolate chips.


Spray baking pan or cupcake tins with cooking spray. I like to use regular size & mini size cupcake tins. It makes portion control WAY easier!


Pour the batter in your baking pan or fill cupcake tins up about 1/2 way (though the batter will not rise very much). Add any extra jazz ( ex. nuts OR microwave 2 tablespoons peanut butter with 1/2 tablespoon coconut oil and swirl on top).


Bake for 12-15mins (mini cupcake tins) or 18-20mins (regular size cupcake tins). 22-25 in a round pan. * Note! a knife or toothpick will NOT come out clean.*


Let set for 10-15 minutes before removing from tins.
