Holy Summer Salad! This simple grapefruit salad is sweet, tangy and earthy. The perfect addition to a summer time picnic or gathering. It will easily complement and LIGHTEN any meal with it's cooling minty goodness. In addition to just being delicious, Grapefruits have loads of health benefits due to their antioxidants and highly valued micronutrients including fiber, potassium and Vitamin C.

Ingredients:
3 Pink Grapefruits
1 bunch Mint (finely chopped)
1 Tablespoon Lemon juice
1 Teaspoon Raw Honey
small pinch of salt
Instructions:
To remove the segments from the grapefruits, peel rind removing all white bits. . To remove the first segment, cut from the outside to the center just inside the membrane on either side of a section. Split in half (bite sized pieces) and toss in bowl with finely chopped Mint. Combine Lemon, Honey & salt in a small bowl and microwave for 30 seconds to melt into a cohesive liquid. Pour warm liquid over grapefruit & mint and toss.
