Matcha & Coconut Protein Squares w/ Salted Dark Chocolate


Looking for a powerhouse treat made of nutrient dense SUPERFOODS, HEALTHY FATS & CAFFEINE to SUPER CHARGE your day?? Skip the preworkout and nosh on somethings super satisfying & clean. These squares are the shit and super addicting. Tailor with your favorite nuts or seeds or even add some dried fruit to mix it up.


Ingredients:

1 cup pitted dates

1/2 cup almonds

1/2 cup cashews

1/4 cup hemp hearts

1.5 tbsp matcha powder

2 tbsp cocoa nibs (optional)

1 tsp vanilla extract

1 tsp coconut extract (optional)

1 scoop vanilla plant based protein powder

2 tbsp melted coconut pil

1 tbsp maple syrup (omit if protein powder is sweet)

water (to get mixture to correct consistency)

shredded coconut

1/2 cup vegan dark chocolate chips

2 tbsp cup coconut oil

1/2 tsp sea salt


Instructions:

Combine dates, almonds, cashews, hemp, matcha & vanilla/coconut extracts in a blender or food processor. Pulse in protein powder, coconut oil & water until a malleable dough forms. Transfer to a bowl & stir in cocoa nibs if using. Press onto a sheet pan lined with wax paper or silicone liner. Sprinkle with matcha & coconut. Freeze for 30 mins. Melt chocolate & remaining coconut oil & stir in the sea salt. Once frozen, remove the bars from the freezer flipping them onto a cutting board & return to pan. Pour chocolate onto the bottoms of the bars & return to the freezer. Once the chocolate has set, remove from the freezer & cut into squares. Store in a Tupperware in the fridge or a cool place.
