Finally, a hummus without the unnecessary fat via added oils! This is truly a gilt free
version of your classic hummus with only 85 calories and 2.7g fat per 1/4 cup!
Not only is it great for all of your dipping needs ( veggies, pretzels, pita) but its an awesome way to add flavor and moisture to any sandwich or wrap in lieu of mayo (yuck).
Yields:
3 - 3.5 cups (12 to 14 1/4 cup servings)
Ingredients:
2 - 15oz cans Garbanzo Beans ( also called Chickpeas) * Drain 1 can. Reserve liquid from 1 can*
4oz ( or a full pepper from the jar) Fire Roasted Red Bell Pepper
1/2 large lemon juiced + zest ( about a teaspoon)
2 heaping Tablespoons organic Tahini Paste ( I get mine from Trader Joes)
1/2 Teaspoon Sea Salt
1/4 Teaspoon Pepper
1/2 Teaspoon Garlic powder ( or 1 clove fresh)
1/4 Teaspoon Cumin
1/8 Teaspoon Onion Powder (optional)
1/8 Teaspoon Cayenne Pepper or Tajin seasoning ( or to taste)
In a blender,
Add garbanzo beans and HALF of the reserved liquid. Add all remaining ingredients and blend until smooth. Slowly add more or remaining reserved liquid until hummus reaches your desired consistency. Keep in mind, it will thicken up a little once it cools in the fridge.
*Options! Leave out the Roasted Red Pepper and use this as great base to use for ANY flavor combinations. My favorites are Lemon/Garlic ( 1 full lemon + more garlic), Lemon/Dill (1 full lemon + 1-2 teaspoon dill), for more tang & smoke add Tajin and smoked paprika or spice it up with any of your favorite flavors!
