I've been testing not-so-basic-bitch chocolate chip cookies for months if not years. Nothing ever stuck as a perfectly consistent Go-To Vegan & Gluten Free recipe.... UNTIL THESE FUCKING GLORIOUS ASS COOKIES. GF, Vegan & sweetened with only maple syrup, these chicks stay soft & taste so perfectly traditional yet complex... not-so-basic-bitch cookie level 100.
Ingredients:
3/4 cup Almond Butter
1/2 cup Maple Syrup
1/4 cup Coconut Oil (melted)
1 tsp Vanilla Extract
1/2 cup Oat Flour
3 tbsp Potato Starch
1 tsp Baking Soda
1/2 tsp Sea Salt
1 cup GF Rolled Oats
Dark Chocolate Chips
Instructions:
Preheat oven 375 degrees. Combine wet ingredients in a medium mixing bowl. In a separate bowl OR sifted directly into the wet ingredients, add dry ingredients except for Rolled Oats & Chocolate chips. Once combined, stir in rolled oats & chocolate chips. Roll into about 20 balls and place on a lined cookie sheet (I've been loving my silicone liners from Costco!). Bake for 10-12mins & let cool for 10-15 mins before serving.
