A good Granola needs a perfect balance of crunch, chew, salty, sweet & overall flavor... and boy does this deliver. Loaded with nutritious nuts, seeds & oats and naturally sweetened with dates & maple syrup, this quick baked granola is sure to be a staple in your meal prep routine!
Ingredients:
3 cups Gluten Free Sprouted Rolled Oats
1 cups whole raw cashews
1/2 cup whole raw almonds
1/2 cup salted pumpkin seeds
1/3 cup salted sunflower seeds
1/4 cup raw sesame seeds
1/4 cup flax seed
1/2 cup melted coconut oil
1/2 cup pure maple syrup
1/3 cup organic tahini paste
1 Teaspoon vanilla extract
1 Teaspoon cinnamon
1/2 teaspoon salt
Other Options:
2 Tbsp organic raw quinoa - this will add a hard crunch & extra protein
6 pitted dates, chopped - this will add sweetness & a little chew. Add when batch is about 10 mins from done
1 tsp coconut extract
1 cup shredded coconut - Add when batch is about 10 mins from done
Swap tahini for cashew butter, almond butter or peanut butter. PB is my least favorite as it doesn't bake as well as the others, in my opinion
Raisins/Dried fruit - Add about 10 mins from done
Instructions:
Preheat oven to 350 degrees.
Mix all ingredients until fully incorporated in a large mixing bowl. Line a baking sheet with parchment paper or spray with cooking spray and spread mixture as thin as possible. Bake for 25 mins. Stir mixture. Bake for another 10-15 minutes. Watch it closely for the last 5mins as it will go from perfect to burnt quickly. The mixture may be a bit wet/chewy directly out of the oven. It will crisp up after cooling for about 10 minutes.
