You will LOVE this dreamy dressing! Each bite adds a creamy brininess that is signature in Caesar dressings. Plus...swapping out the heavy fatty dairy for a lighter more protein packed version makes this dressing such a perfect pairing to a Kale Ceasar Salad with QueerlyRooted Gluten Free Croutons (see separate recipe).

Ingredients:
1 cup plain hummus (homemade or store bought is fine)
2 tbsp capers w/ juice
1.5 tbsp dijon mustard
1 tbsp lemon juice
1 tsp onion powder
10 cloves roasted garlic (I like the preroasted packs in the produce section) OR 3 fresh cloves OR 1.5 tsp granulated
1/2 tsp black pepper
1.5 tbsp nutritional yeast (start with 1 tbsp if you aren't a fan of nutritional yeast flavor generally)
1/3 cup water ( or to desired thickness. Dressing will thicken a little in the fridge)
Blend all ingredients in a high speed blender. Best after 15+mins of refrigeration.
