This easy seasonal salad is delicious served both warm and cold. Hearty quinoa & walnuts combined with slightly sweet apple & raisins with a touch of seasonal spices is the perfect warming winter side. Eat alone, serve over a warm kale salad or partner with your favorite winter meal.
The sweet & cinnamon-y winter vinaigrette is AMAZING. Add to nearly ANYTHING to transform into a warming treat.
Winter Cinnamon Vinaigrette:
1/3 cup Extra Virgin Olive Oil
1 Tablespoon Dijon Mustard
1 Tablespoon Maple Syrup
1/2 lemon juiced
1/2 Teaspoon Garlic Powder
1/2 Teaspoon Onion Powder
1/2 Teaspoon Salt & Pepper
3/4 Teaspoon Cinnamon
1/4 Teaspoon Ginger Powder
1/4 Teaspoon All Spice
Winter Quinoa Salad:
Ingredients:
3.5 Cups Cooked Sri-Colored Quinoa cooked in vegan chicken flavored broth or vegetable broth per package instructions.
1 diced apple ( I used gala)
1/2 cup Golden Raisins
1 cup Toasted Walnuts
Winter Cinnamon Vinaigrette
Cook quinoa according to package. It's best to cook quinoa in a vegan chicken flavored broth or vegetable broth. Toast Walnuts for 10 mins in a 375 degree oven until lightly browned. In a large bowl, combine warm cooked quinoa, diced apple, golden raisins & roughly chopped toasted walnuts. Stir in Winter Cinnamon Vinaigrette. Serve warm or cold.
